This baked artichoke casserole is the next best thing to stuffed artichokes and it’s a lot easier to make. I’m Italian, and my family has many favorite recipes that we have enjoyed during the holiday season. One of my favorite family side dishes were stuffed artichokes.
Stuffed artichokes are not very hard to make. However, if you have several people coming to dinner, it does get difficult and can be time-consuming to prepare them.
Years ago, I got this recipe from a coworker. She of course was Italian, and I trusted it would be tasty.
My best and favorite recipes have been ones that friends, and family have passed along to me. The nice thing about this baked artichoke casserole dish is that you use canned artichokes and you do not have to worry whether artichokes are in season.
This artichoke casserole is an easy side dish to bring to a dinner party at someone else’s house.
Ingredients
- 1 stick melted butter plus more to drizzle
- 2 cloves of minced garlic
- 1 medium onion chopped & diced
- 1 small package of mushrooms, chopped and thinly sliced.
- 1 tsp. oregano
- Salt and pepper to taste
- 2 cans of artichoke hearts drained well
- ½ cup bread crumbs
- ½ cup Romano cheese (plus more to sprinkle on top)½ cup white wine
Steps:
In a skillet, melt the butter over medium heat. Add the minced garlic, diced onion, and then add the sliced mushrooms, and oregano and cook for a couple of minutes until the onions are translucent.
Season with salt and pepper to taste
Transfer sautéed mixture to a buttered casserole dish.
Add drained artichokes, breadcrumbs, and Romano cheese. Toss to mix well.
Pour ½ cup of wine on top of the casserole mixture
Drizzle a little extra melted butter on top and sprinkle with more grated parmesan or Romano cheese. I like to always combine Parmesan and Romano cheeses in my recipes. Using the two together is flavorful especially if you love cheese.
Bake at 350 degrees for around ½ hour until top is lightly browned and breadcrumbs are toasted.
Serve with Italian Bread.
A twist on traditional holiday side dishes
This artichoke casserole is a little different from most traditional sides that are normally prepared for holiday meals. However, some traditions can be amended.
When I was growing up, my mother and my grandmother always made homemade ravioli to eat before the turkey was served on Thanksgiving. If you are Italian, Pasta is served with every meal. Unfortunately, the problem with serving pasta on Thanksgiving, is that no one eats the turkey or stuffing. It was years before we decided that it would be alright if we celebrated Thanksgiving without adding another main course as a side.
