During the winter months, I always find pleasure spending time in my kitchen. As some of you may know, I enjoy making soup because I can easily pass it along to family and friends or freeze any leftovers I may have.
I found this recipe for Creamy Cauliflower Soup recipe on a website called As Easy As Apple Pie. You can find the original recipe here. I have made a few small adaptions to suit my personal taste.
This cauliflower soup is so delicious. Elena’s original recipe is dairy free, however being the cheese loving person that I am I choose to make it a little richer and add a some gruyere cheese.
Cauliflower is an underrated vegetable and a nice alternative to broccoli.

Cauliflower is quite nutritious and has many health benefits. Including that it is high in fiber and a great source of Antioxidants. Cauliflower also keeps your bones healthy with its Vitamin K. The Vitamin C found in cauliflower helps aide with collagen production. Eating cauliflower can help boost your HDL cholesterol (the good kind) and lower your blood pressure. Cauliflower also contains Choline, which, helps aide in your gastrointestinal health. With that being said, you can see why it is so popular right now!
Cauliflower Soup Ingredients
- 2TBS. olive oil
- 1 medium white onion chopped
- 2 cloves of garlic chopped
- 1 head of cauliflower chopped
- 2 sprigs of fresh thyme
- 4-5 cups of chicken stock
- sea salt and pepper to taste
- ½ cup shredded Gruyere cheese
Cooking Instructions
Sautee the garlic and the onion, when tender add the chopped-up cauliflower, and the chicken broth and let simmer about an hour until all the vegetables are soft.
Then with an immersion blender blend until smooth and then season with salt and pepper.
Lastly add the shredded gruyere cheese and continue to stir until the cheese has all melted. Add the roasted chickpeas on top to serve.
How to make the Roasted Chickpeas
- 1 can of chickpeas rinsed and drained
- 1 TBS olive oil
- 1 tsp. smoked paprika
- sea salt and pepper to taste
Toss the chickpeas with all the ingredients and roast for about 25 minutes in a 350-degree oven. *Stir at least every 8 minutes to allow them to brown evenly.
These chickpeas are delicious and a great healthy snack. Also they are loaded with protein and fiber. In fact, eating roasted chickpeas will help curb that mid-afternoon hunger. Enjoy them alone or in add them to soups or salads. They do not really store well but that won’t matter because they are so tasty they will disappear quicker than it takes you to make them.
