The other day, I was scrolling through Instagram and saw a delicious looking recipe on The Giadzy for Orecchiette Pasta with Prosciutto and Peas. It looked easy and I just happened to have leftover ham in my freezer from a family party that I could use in place of the prosciutto. I always try to save food and not let anything go to waste. I had quite a bit of left-over ham after my children visited and I froze the ham in small portions for later use. The ham bone is still in the freezer, and I will use that portion for when I decide make pea soup. Now, one pound of pasta is a lot to cook for two people, but, thankfully my husband doesn’t mind reheating the leftovers. The recipe below serves four persons as an entrée. Fresh crusty bread on the side is all I would add! Sharing the recipe with you below. Enjoy!
Ingredients
- 1lb of pasta
- 2 large cloves of garlic chopped
- 1/3 lb of chopped ham, (you can substitute prosciutto, salami, or pancetta)
- One small shallot chopped
- 12 oz bag of frozen peas
- 1 or more cups parmesan cheese
- Salt, red pepper flakes
- Olive oil
Directions for Pasta with Prosciutto and Peas
Cook the pasta as directed.
Next, heat a large skillet with olive oil.
When oil add your chopped ham or prosciutto, stir often. Next, add shallot and garlic
While that is cooking place the frozen peas in the microwave to thaw about two minutes. Drain the peas and add to frying pan with your prosciutto, shallots and garlic. Smash down a few of the peas while cooking.
After the pasta is cooked drain and reserve about one cup or more of the pasta water. Add the pasta water to your frying pan a little at a time along with the drained cooked pasta.
Continue to stir mixture and add your cheese. Season with Salt and Red pepper flakes.
Add additional pasta water if needed. Just before serving add additional cheese.
