Fresh peaches are in season and I’m feeling peachy keen. There’s nothing like fresh fruit and vegetables. Another perk is the prices are less as opposed to buying them when they aren’t in season. One of my favorite childhood memories is of my grandfather slicing fresh peaches and letting them soak in wine. Yes, we were underage children that would drink wine occasionally, but having European grandparents it was customary. I cherish the memories of my grandparents introducing us to a variety of food, especially Italian food. We should all keep in mind that a simple gesture such as sitting at a table with our grandchildren can make life lasting memories.
I’ve carried on the tradition of soaking fresh peaches but have chosen to soak the peaches in home brewed iced tea. It’s tasty, and sometimes I’ll add a dash of cinnamon along with stevia for a guilt free refreshing drink.
Another favorite recipe I make each season is homemade peach cobbler. A cobbler is easy to make and if it is served warm with fresh whipped cream or ice cream it makes a delicious dessert! It’s exceptionally nice if you have dinner guests. You can make it ahead of time, and your home will smell wonderful while its sits out on a counter waiting to be served.
Recently I came across a recipe for a grilled peach salad after we purchased a Cuisinart Griddler. Their recipe calls for fresh prosciutto and burrata cheese which sound wonderful, but I didn’t have all the ingredients on hand, so I improvised and came up with the recipe below.
Grilled Peach Salad
- 2-3 fresh peaches sliced
- Fresh organic greens
- ½ cup Slivered almonds
- Crumbled Goat Cheese
Peach Salad Dressing
- ¼ cup olive oil
- 1/8 cup Balsamic Vinegar
- 1 tsp. honey
- 1 dash of cinnamon
Steps:
To prepare the peaches, coat your grill with cooking spray or a little olive oil. Place the peaches on a hot grill. Grill until the grill marks are visible on one side. Arrange the organic greens on a salad plate.
Place the grilled peaches on top of the lettuce
Toasted Almonds
To toast the almonds place them in a frying pan that has been preheated and toss until golden brown. This will not take long. When they are a light golden color, remove them immediately from the pan so they do not continue to brown.
Sprinkle your crumbled goat cheese and toasted almonds on top of your salad . Then drizzle the dressing on.
Quick & Easy Peach Cobbler
- 3-4 Sliced Peaches
- 1 tsp of Cinnamon
- 1 tsp of Sugar
- 1/2 cup of butter
- 1 cup of flour
- 3/4 cup of sugar
Pre-heat oven to 350 degrees
Arrange sliced peaches on the bottom of a buttered 8 inch round pie plate. Sprinkle the peaches with a little cinnamon and sugar.
In a bowl mix one stick of butter into 1 cup of flour and ¾ cups of sugar with a fork until crumbly.
Add crumbly mixture on top of peaches and bake in a 350 degree preheated oven until golden. Serve warm with ice cream or freshly whipped cream.
