This simple peach cobbler recipe is originally from my girlfriend Kay. Our women’s golf league published a cookbook for charity, and we all submitted our tried & true family favorites. I enjoy this particular type of cookbook because if your name is in a book, you want to make sure that your submission is notable.
Since now is the perfect time for delicious ripe peaches, I’m making all my favorite summer peach recipes, including this refreshing sweet grilled peach salad. This simple peach cobbler recipe takes just minutes to prepare. Plus, when using fresh seasonal fruit, it is a special treat. This is a terrific bake and go dessert if you are heading to a summer party. If you are entertaining at home, it can be prepared ahead of time, so you can enjoy your friends and later impress them with a homemade dessert.
It is best served warm, although I did eat the leftovers cold right from the refrigerator for breakfast the next morning. To serve, top with fresh cinnamon and whipped cream, or as my husband prefers vanilla ice cream.
Ingredients
- 5 large peaches peeled and sliced
- 3/4 cups of quick rolled oats
- ½ cup brown sugar
- ½ cup flour
- 1/3 cup butter softened
Directions
Cream together brown sugar, flour and butter. Arrange sliced peaches in a greased 8” baking dish. Stir the rolled oats into the butter mixture and crumble the mixture on top of the peaches. Bake at 350 degrees for 30 minutes.
Cinnamon whipped cream
Whip together one small container of heavy whipping cream, one teaspoon of vanilla, 1 teaspoon of sugar, and a few dashes of cinnamon.
