A simple soup recipe that I wanted to share- its healthy & easy. I’m obsessed with eating more greens and am always trying to figure out how to keep them in my diet. Below is a soup recipe that will give you the rewards of healthy eating and the comfort of hot soup on a chilly day.
When I was young my mother used to tell us the story of Stone Soup. It’s an old Folklore in which a hungry stranger convinces the people of a town to all share food in order to make a pot of soup that everyone enjoys. Given the fact that soup is usually made in a large sized pot- it means it just has to be shared.
I really love soup and I have very large pots so without a doubt, I’m always passing out extra to my family.
This soup is simple, with just a few ingredients, yet it’s hearty and full of nutrients.
Spinach and the kale contain Vitamin K & C, folic acid, iron and calcium. The beans are full protein, fiber, B vitamins and other nutrients.
It’s definitely a soup that you will feel good about eating not only because it tastes good but also because it’s also healthy and good for you. You can make it dairy free and omit the butter. However, I prefer the flavor the butter adds.
I love making soup as much as I enjoy eating it. Maybe because it reminds me of the story I was told as a child, or the fact that the storyline is about people coming together and sharing.
As I said earlier, food was meant to be shared. Meals shared with friends, family and neighbors are more meaningful. Another great thing about soup is that it can sit on the stove all day long and doesn’t require much tending to.

Healthy Spinach & Kale Soup
Ingredients:
3 Tbs Olive oil
1 Tbs butter
1 small onion diced
1 clove garlic
1 stalk celery
1 carrot
8 cups chicken broth
Sea salt and pepper to taste
2 bay leaves
A teaspoon Rosemary
1 pkg. fresh spinach
2-3 handfuls of fresh kale
2 cans white beans rinsed and drained
Grated Parmesan Cheese (optional)
Steps:
- Heat olive oil and butter
- When hot sauté onion, garlic, celery, and carrot.
- When onions are transparent add chicken broth, salt, pepper, bay leaf, rosemary, simmer for 10 minutes.
- Add spinach and Kale
- Then add drained beans.
- Cook about 20 minutes.
- Serve with grated Parmesan cheese (optional)
