Making Tortilla Pizza and a Gluten Free Twist on Pizza
With summer upon us, our grandchildren will be out of school and visiting more often. As grandparents, we better have a few tricks up our sleeves with entertaining them. Whether we need to help out with babysitting or just have them over for fun, your grandchildren will be spending more time around your house. Here is a suggestion for an easy lunch or dinner your grandchildren can enjoy making with you this summer. My friend Donna passed this Tortilla Pizza recipe along to me and I can confirm that it was a success. My daughter Brittany suggested that I can also substitute ready made cauliflower pizza crust from Trader Joe’s for the tortillas too if you were looking for a gluten-free option. This was definitely something new for me and I liked it so much I’m sharing it with you.
Fun activity with your grandchildren
My grandchildren and I had a such fun making these pizzas together. They really enjoyed having individual pizzas and adding their favorite toppings. I decided to get creative and place the toppings in little bowls in the center of the table.
Next, I gave them each their own plate and their choice of the cauliflower crust or a flour tortilla. I placed the pizza sauce in a bowl with a marinating brush and let the girls use the brush to add the sauce on the crust themselves. After the sauce was spread on, I passed around the bowls of assorted toppings for each of the girls to add as their personal touch.
I want to for warn you, that after they are cooked the pizzas may look a little different. As a grandmother, it’s your responsibility not to mix them up between the children as I almost did.
Use a spatula to lift the pizzas off the dishes and place onto the cookie sheets, careful as they will be a little delicate. Also, you will probably only fit either one to two pizzas per cookie sheet.
After the pizzas cook you’ll need to use your spatula again to carefully put them on plates for the kids to eat. The tortilla crust will be crisp, so you’ll want to make sure they don’t crack and break. The cauliflower crust held up a little better.
Now it’s time for all of you to enjoy the meal you prepared together. I can’t promise that the clean-up is as easy as the preparation but it will be worth it in memories.
