What do you do with your leftover Halloween Candy? It’s always difficult to predict just how many trick or treaters you will have. The last thing you want to do is run out of candy and disappoint the kids! With that being said, I always buy extra candy and plan to use the leftovers if I have any.
I can easily come up with recipes for leftover M&M’s, such as making a pretzel mix, homemade chex mix, or cookies. Have leftover Skittles? You can make rice crispy treats and add the skittles. You can also add, leftover peanut butter cups or gummy bears. I also have a delicious milky way cake recipe that I make with the leftover milky way bars.
However, if you have leftover Hershey Bars, you are in luck. The chocolate can be added to a variety of sweet treats. The pure milk chocolate from the leftover Hershey bars can be added to cookies in place of chocolate chips or even added to brownies as a sweet toping.
My favorite recipe for leftover Halloween candy-English Toffee
I discovered this English Toffee recipe on Pinterest@momontimeout and wanted to give the homemade toffee a try. I revised it a bit for my own taste buds.
Below is what you will need to make your own English Toffee
Ingredients
- 4 sticks of unsalted butter
- 1½ cups chopped pecans or almonds
- 2 cups of sugar
- 1 ½ tsp. sea salt
- 2 tsp. pure vanilla extract
- 2 cups of chocolate (I used about 30 candy miniature Hershey bars)
Instructions
- Line a large cookie sheet with parchment paper.
- Spread the nuts evenly on top of the parchment paper.
- Add the butter, sugar, and salt to a 3 qt. sauce pan and cook over a low heat until it starts to bubble
- Once the mixture starts to bubble you will need to stir constantly. You will also need to use a candy thermometer, as you want the temperature to reach 300 or hard candy on the thermometer.
- Remove the mixture from the burner and stir in the vanilla.
- Then pour the mixture over the nuts. This gets a little tricky as you will need to spread it quickly before it starts to harden.
- Let sit while you melt the chocolate. I placed the chocolate bars in a measuring cup and microwaved them for one minute. Next, I removed the chocolate from the microwave and stirred the melted bars until they were completely melted and had a smooth creamy texture. Letting them finish melting by stirring will prevent the chocolate from burning.
- Spread the melted chocolate over the toffee and swirl it around until it completely covers all the toffee.
- Lastly, I lightly sprinkle on some finely ground nuts and a little added sea salt. That’s it!
- Cover the pan with foil and place in the refrigerator to harden. It will take a about 2hrs.
Once it has cooled you can break it off into pieces. I store the english toffee in a cookie tin lined with wax paper. This is a great treat to bring to a friend’s house or to serve to unexpected guests that pop in. It should last several weeks, but I have never had it around my house for too long as my family loves this toffee.
